Remove the lid from the fountain and add fresh water and ice cubes into the glass bowl. The tap is turned slightly and the ice-cold water slowly drips from the fountain onto the sugar cube. The cold, sugar-sweetened water then drips from the spoon into the absinthe glass, thus releasing oils and perfuming the air with fennel, grand wormwood, and anise. The combination also begins to turn a milky white color as the water mixes with the anise.
