The Lejay-Lagoute distillery / firm (or Lejay Lagoute) in Dijon is the inventor and one of the main producers of Crème de Cassis de Dijon.
Founded between 1836 and 1841 by Auguste-Denis Lagoute (owner of the Café des Mille Colonnes in Dijon), it was born from his inspiration by the ratafia de Neuilly he discovered in Paris. After experiments, he developed the first crème de cassis in 1841 by macerating local blackcurrants in beet alcohol, with the addition of sugar. This was the birth of "Crème de Cassis de Lagoute," officially recognized as a Dijon invention.
